Imperator's vineyards spread across roughly one hundred stremmata around the two monasteries, in Metsovo and East Zagori, at high altitude. A single-estate winery, where every bottle is born exclusively from the grapes of these vineyards. The soil is worked with zeolite and natural fertilization.

The vineyards lie among the most mountainous in Greece. The altitude is no detail: it means a wide temperature swing between day and night, slow ripening, and grapes with pronounced acidity and aromatic intensity. In Zagori, the vineyards of the Monastery of Votsas sit within the Cultural Landscape inscribed on the UNESCO World Heritage List.

Zeolite is added to the soil, a mineral that improves fruit quality by retaining water and nutrients and releasing them gradually to the plant. Fertilisation happens naturally, with manure from the herds that graze on the Politsies plateau of Metsovo, an area known for its aromatic herbs.
